This broccoli soup is so easy to make that it will become a regular at your table. It has a creaminess you would find in a dairy-based soup, but without the cream. We don’t need cream here! I love how the flavor of broccoli comes through with a bit of sweetness from the leeks. Gosh, this was so yummy. If you like croutons add them in. We like raw pepitas on top for some crunch as well as its’ high levels of zinc and magnesium.

Langoustine in Curry Sauce over Coconut Rice
The other day I was doing my usual shopping at Trader Joe’s and was looking to whip up something quick for dinner. I saw the Langoustine (a lobster that looks like crawfish) and thought “hmm why not make this with a coconut infused rice, Langoustine in curry sauce, is what’s for dinner tonight.” Basically a last minute Trader Joe’s Dinner. Not the traditional curry infused Indian cuisine you would find, but equally delicious with the Langoustines and sweetness from the peas.
Pad Thai (gluten free, dairy free, soy free)
I have never made Pad Thai before, but love, LOVE it, especially with shrimp, and usually order it when my husband and I go out for Thai food. My kids also love it but because just about every place makes it with gluten, and pick-up stixs’ (food chain) gluten free version is not my idea of good food. Sorry just my honest opinion. So this was a challenge, yes, to make it gluten AND soy free! I was determined to make this delicious without any indication that soy sauce was missing. I thought how hard can this be if I can get a pad thai sauce in a bottle. But no such luck, pad thai sauce has gluten. So it’s time to improvise …
