Hearty Vegetable and Bean Soup

January 28, 2015 By Jessica

Hearty Vegetable and Bean Soup

I’m sure you’re feeling the winter chill (who isn’t? — especially the east-coasters who have been hit with lots of snow), and could use a big bowl of some hot soup filled with tons of filling veggies, if so, then this recipe is for you.

I made this for my three younger boys who got the flu, one after the other. First my thirteen year old, then my youngest twin (who decided to eat his brothers’ half-eaten toast that was sitting in his room), and eventually his twin who wanted to comfort with kisses – when I saw him laying next to his brother watching TV and hugging him I knew we were not done with this just yet. It breaks my heart when my kids are sick. read more

Game Day Pulled Pork Sandwiches

January 17, 2015 By Jessica

Game Day Pulled Pork Sandwiches

A day of watching football requires some good game day food like these pulled pork sandwiches, on a sesame seed bun. Yay for sesame seed buns! The layers of flavor packed into this sandwich will quickly make this a crowd pleaser. Make sure to have extra napkins on hands, it’s a messy one, but in a good dripping-down-your-chin kind of way. I love how the pickles and pickled onion give it a bright, tanginess and the acidity in the cabbage slaw compliments the pork. A super satisfying sandwich that I hope you enjoy as much as we do on game day (or any day!). Who are you rooting for this weekend? Colts or Patriots? Packers or Seahawks? read more

Easy Hummus (gluten free, dairy free, nut free, soy free, vegan)

January 15, 2015 By Jessica

Easy Hummus (gluten free, dairy free, nut free, soy free, vegan)

I never liked hummus, rather, it never liked me. The store-bought stuff would make me feel heavy and bloated but I ate it anyway because I loved the flavor. A few years ago I learned that boiling chickpeas with kombu seaweed aids digestion. It provides the enzymes it needs to break down the oligosaccharides (the complex sugars that are hard for most to digest). Low and behold, after noshing on my first homemade batch I felt light enough to eat more (and more with an overjoyed enthusiasm that a non-hummus lover could never comprehend). There’s no stopping now. read more

Chinese Chicken Salad

January 8, 2015 By Jessica

Chinese Chicken Salad

I adapted this Chinese Chicken Salad for dinner last night. I had the “original” (minus the noodles) while out with a friend at this popular pizza chain restaurant last week.  As I’m eating, I thought: “Why not make this salad for dinner? … something light after all the sweets we have been eating since Thanksgiving”.  Not that that’s all I have been feeding my brood, but it kinda feels that way. A light, easy dinner is just what we needed. read more

Welcome!

Hi! I'm Jessica, welcome to my blog! I'm a wife and mother of four (all boys, including twins. Did not see that coming!) who loves to eat. Discovering food intolerances in my family and myself had me think about cooking differently with an emphasis on nutrition, but not any less deliciously. No, won't settle for that, neither will my kids! Here you will find simple, healthy, seasonal recipes we love that are gluten, dairy, and soy free. Many are also egg free, nut free, plant-based and/or grain free, given our evolving dietary lifestyle. Even though we live a life of dietary restrictions, my passion for food keeps me on a constant quest to create tasty recipes or adapt our favorite recipes from my stack of cookbooks to bring back the joy of eating again, without sacrificing flavor. Hope you find some inspiration and recipes to enjoy ... thanks for stopping by!
