My husband loves a good piece of cake with his coffee for breakfast. His breakfast-of-choice for many years, pretty much every morning. That was before we married and my heckling him about eating a healthier breakfast like oatmeal or avocado on toast. Not much fun, but I do want to keep him around a long time.

Wait! Before you balk at this potato salad with all the green beans, I must tell you it is worth giving a try. Seriously, stick with me here I wouldn’t steer you wrong.
When I first tasted my friend Lauren’s potato salad I knew she meant serious business. Before that, I wondered why the heck there are green vegetables in her potato salad, not very common, and certainly not the type I’m accustomed to. I mean, how do green beans contribute anything to a good old-fashioned potato salad. But as friends do, we give it a try and hope for the best. And the best it was.
Full on carb loading and sweet cravings are back in time for the weekend. Hope you’re hungry for some pancakes I made us a bunch!
They may be full of carbs and sweets, but they are also plenty full of nutrition, including fiber. No need for any guilt. These are as good as they are good for you!
Most days I’m thinking of something quick, and easy but also kid-friendly for dinner. I wish I could spend hours in the kitchen creating fabulous multi-step recipes but reality hits on those school days when I’m panicking because I need to get dinner on the table in less than an hour.
