Ready for some football?? Football season is back! With my house being filled with boys (five), football is big around here.
We kicked off the season with this sweet and spicy chicken wing drummettes as an appetizer for our game eats. One of our favorites. You will love these, they are so tender with the right flavors, and that honey…finger licking goodness. It’s never enough around here!
I like to use drummettes, the thicker part of the wing, which I find to be juicier and meatier. I bake them in the oven, then toss in honey and tabasco, super easy and addictive. I made a simple “ranch” dip with just two ingredients to go with it and some celery sticks for a crunch or two in between those spicy bites.
These are also easy to make ahead and freeze. Simply defrost in the refrigerator, overnight, and reheat in a 300 degree F oven for 20-30 minutes until hot.
* NOTE: While the wings are SOY-FREE, the dip contains SOY LECITHIN.
Makes about 30 Drummettes
Total Time: 45 minutes
3 1/3 pounds organic chicken drummettes
2 tablespoons taco seasoning (Trader Joes’s brand)
4 tablespoons brown sugar
1 tablespoon kosher salt
2 teaspoons ground cumin
1 teaspoon garlic powder
2-3 tablespoons Honey
few splashes (about a teaspoon) Tabasco Sauce
Add chicken into a large glass or stainless steel bowl, toss all the seasonings and brown sugar over the chicken, cover with plastic wrap and refrigerate for an hour or two.
Preheat the oven temperature to 400 degrees F
Place all the seasoned chicken onto a parchment lined baking sheet spread out so that they don’t touch. If you are doubling the recipe use two pans.
Bake for 35 minutes.
Add the baked chicken to a large bowl. Add 2-3 tablespoons of honey (as desired) and a few splashes of tabasco sauce. Using large serving spoons, toss to combine well to coat the chicken. Serve hot.
These are finger lickin’ good!
For the “Ranch” Dip:
3 tablespoons gf, vegan chive & garlic cream cheese (Galaxy Nutritional Foods brand, at health food stores)
2 tablespoons plain coconut yogurt (So Delicious brand)
Add to a small bowl and mix well.
Serve chilled with celery sticks and chicken wings.
