Plum Tart

  • You will need a 9½ inch tart pan with a removable bottom
  • Ingredients:
  • 2 cups gluten free all-purpose flour (I use Bob’s Red Mill)
  • ¾ cup finely chopped walnuts (to appear crumbly)
  • ¾ cup light brown sugar, lightly packed
  • 6 ounces Earth Balance Soy Free Spread, chilled and diced
  • 1 whole large egg
  • 2½ pounds firm, ripe plums, pitted and quartered lengthwise (any variety you like will work here)
  1. Preheat the oven to 400 degrees F
  2. In a stand mixer fitted with a paddle attachment or a medium bowl using an electric mixer combine the flours, walnuts, and sugar, mix until well blended.
  3. Add the butter and the whole egg.
  4. Mix until the batter looks crumbly, about 3 minutes.
  5. Press about two-thirds of the crumb mixture (1½ cups) in an even layer into the bottom and along the sides of a 9½-inch tart pan. Arrange the plums in the pan, skin side down, to form a flower pattern; begin at the outside and work your way in.
