I don’t think I have ever fallen in love with pesto, until now. What started out as a throw-a-few-ingredients-together kind of recipe turned out to be love at first taste. And just look at that color.  #springtimehappiness

I originally made it as an add to penne pasta for a quick weeknight dinner (a big hit and a must try!) but it wasn’t enough. We were all so struck by this new mash-up of a pesto that I made another batch that night to shmear on toast – instead of the usual avocado – the next morning and then, all week long.  read more

So is asparagus season – yum! Our relationship has come a long way.

Growing up, raw carrots, lettuce, and tomatoes were welcomed on my plate, for the most part, and nothing else. The green vegetables were what I had a tough time with. Many years ago, while living in New York and dating my now-husband, we would love to get breakfast at the local diner. The order was always two sunny-side-up eggs, hash browns, toast, and coffee. It was simple but satisfying and brings back memories of those days at the diner giggling and me taking small bites, because what would he think of me! New York “hash browns” were not your typical crispy, oval-shaped hash browns, more like stove-top diced up potatoes and onions with bell peppers. read more

This may be exactly what one needs after indulging on Super Bowl Sunday. And that one is me. If you over-indulged like I did, this one’s for you – not exactly a detox salad, but close.

Even me, who is not big on football, enjoys watching the game (what a close game it was!) so long as there is plenty of guacamole, chips, and pretzels … food I brought over to our friend’s house (who happens to have a huge TV, perfect for watching a bunch of guys tackle each other, don’t you think?) just in case there may not be anything my family can eat. I’m sure you’re feeling the winter chill (who isn’t? — especially the east-coasters who have been hit with lots of snow), and could use a big bowl of some hot soup filled with tons of filling veggies, if so, then this recipe is for you.

I made this for my three younger boys who got the flu, one after the other. First my thirteen year old, then my youngest twin (who decided to eat his brothers’ half-eaten toast that was sitting in his room), and eventually his twin who wanted to comfort with kisses – when I saw him laying next to his brother watching TV and hugging him I knew we were not done with this just yet. Easy Hummus (gluten free, dairy free, nut free, soy free, vegan)

I never liked hummus, rather, it never liked me. The store-bought stuff would make me feel heavy and bloated but I ate it anyway because I loved the flavor. A few years ago I learned that boiling chickpeas with kombu seaweed aids digestion. It provides the enzymes it needs to break down the oligosaccharides (the complex sugars that are hard for most to digest). Low and behold, after noshing on my first homemade batch I felt light enough to eat more (and more with an overjoyed enthusiasm that a non-hummus lover could never comprehend).
