I adapted this Chinese Chicken Salad for dinner last night. I had the “original” (minus the noodles) while out with a friend at this popular pizza chain restaurant last week. As I’m eating, I thought: “Why not make this salad for dinner? … something light after all the sweets we have been eating since Thanksgiving”. Not that that’s all I have been feeding my brood, but it kinda feels that way. A light, easy dinner is just what we needed.
Scallion Egg Piroshki (Galette), in honor of my Grandmother Dina
This recipe is in memory of my grandmother, who would make this for most of our big family gatherings. I think she knew they were my favorite. I was pretty transparent about it as I would run into her house straight for the kitchen, barely a hello, looking for scallion egg piroshki (meaning “dough with filling” in Russian also known as a galette, in French) fresh out of the oven. It was my most favorite thing she would make. That and her crescent walnut cookies coated with tons of powdered sugar. Hers tasted a hundred times better than mine. Though she made it with gluten, that’s not what made it different. There was something she did with the scallions. They were always so incredibly soft and coated with egg. Nobody in the family has the recipe, unfortunately, so I had to settle for guessing.
Black Rice with Curry Seasonal Vegetables
We had black rice with curried vegetables for dinner tonight. Black rice is a new food for our table. A food everyone embraced with enthusiasm, as they dug into a bowl of black and orange food. Fun food because it’s so out of the ordinary to see black rice on their plates. Or should I say Halloween food. It is Halloween week after all, why not have a little fun with food, right?
Grilled Cheese Sandwich and Soup for Dinner, Halloween Style
Autumn is upon us, and what’s better than a soup and sandwich, especially when the day is filled with errands and after-school activities. It was hectic, but no rest for the weary, as the question “What’s for dinner?” confronts me.
To de-stress (and get a laugh) I spontaneously threw a little fun into dinner with my old Halloween cookie cutters. I had to dig way back under other stuff that I don’t see for a year, you know those cabinets. That took longer than it needed to, but it’s a good thing I had soup in the fridge. Ginger Apple Carrot soup is what I made Monday to use up some of the apples I had bought last week due to a strong urge for apples that I couldn’t conquer. Costco had a sale on organic apples in three varieties, so instead of the orchard I went to Costco to pick some apples. Costco was much closer.

Easy Beef Stew {gluten free, dairy free, soy free, paleo}
With the beginning of the cool season I like to make stew – making use of those “what do I make with this?” cuts in my freezer. What is fall with a comforting stew?
For my beef stew recipe, I chose three cuts – eye of round, chuck, and shank cross-cut, all moderately priced cuts that go well in stews. I braise the meat after coated in coconut flour (recipe is paleo), then it all simmers in the oven for 1 1/2 hours. What you get from these very chewy cuts is the most tender meat that pulls apart without a knife. Did I mention how easy this stew recipe is? Or how you can freeze half of it? Oh yes. I know you have a lot to do. And Halloween is coming up…
Cabbage Salad with Peanut Chili Maple Dressing
My favorite thing to order at Real Food Daily, a vegan restaurant in Los Angeles, is the yin yang salad. We are not vegan, but we go to vegan restaurants because we know there won’t be any issue with dairy accidentally getting into my children’s food. Living allergen-free and going out to eat don’t always work out well, so places like this are safer for us to go to. Most vegan restaurants have gluten free options. I know it can be confusing sometimes when I say dairy free and then post a chicken recipe. With some of my meatless recipes being egg-free I can share recipes with my vegan friends 🙂
Onion Quiche
Sometimes I want a good slice of quiche with a side of salad on a Saturday afternoon. Something that I cannot go pick up at the store, not even the health food store. The freezer section has gluten free crusts, but never dairy free and soy free too, which leaves me to the old-fashioned way. My Grandma would be proud, considering I would not care to hang out in the kitchen as a little girl. My grandmother would make everything from scratch. My favorite was her pickled watermelon and cinnamon rugelach. Yes, pickled watermelon, tastes way better than it sounds, really.
